10% Greco

Certified organic Fiano from a vineyard just below the ridge in McLaren Vale, with a dash of Greco from a small vineyard closer to the Gulf St Vincent. Some brief maceration for texture, a firm press, and Gerardo Iacoucci's 'Sabbie d'Oro' on repeat has birthed a wine of lifted citrus blossom aromatics, gentle bitterness and al dente texture – a fish's best friend.
